Preheat oven to 350 and place liners in muffin tin
Dice apple, I leave the peel on the apple.
In a large measuring cup or small bowl, add plant-based milk and apple cider vinegar and let stand for a few minutes.
Add all the dry ingredients, flour, baking powder, baking soda, cinnamon, allspice, and sugar into a large bowl and mix well.
Add the apple sauce and vanilla to the plant-based milk and mix.
Add the wet ingredients to the dry and stir.
Add the diced apples, cranberries and walnuts and mix.
Spoon into muffin cups and bake for 25-30 minutes
