Applesauce Cake

An easy and delicious apple cake recipe that can be modified with extras to make it yours.

Equipment

  • 1 square baking dish
  • 1 mixing bowl
  • 1 mixing bowl for liquids
  • 1 measuring cup
  • 1 whisk or hand mixer
  • parchment paper

Ingredients
  

  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 2 tbsp ground flax
  • 6 tbsp warm water
  • 1/2 cup olive oil
  • 1 tsp vanilla
  • 1 cup applesauce
  • 1 cup sugar

Optional Ingredients:

  • 1/4 cup walnuts or pecans
  • 1/4 cup cranberries
  • 1/4 cup chocolate chips
  • 1/4 cup raisins

Instructions
 

  • Place 2 tbsp ground flax in a small bowl and add 6 tbsp water and let sit.
  • Preheat oven to 350
  • Line a square baking dish with parchment paper
  • Place flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg in large bowl and mix well.
  • In a large measuring cup add applesauce, vanilla, olive oil and sugar. Then add flax mixed with water and stir.
  • Add wet ingredients into dry and mix well by hand, or with a mixer.
  • Add any optional ingredients
  • Pour into pan and bake for 50-60 minutes
