Date Squares
Date Squares or Matrimonial Cake is a Canadian classic. Originating in the prairie provinces during the 1930s when people couldn't afford flour, oats were the base of this delicious recipe. Matrimonial Cake refers to the layers of oats brought together by the dates, like two people dating 😉 and getting married.Whatever you call them, they make a great hiking snack or an easy dessert.
Equipment
- 1 Medium Saucepan
- 1 square pan greased or lined with parchment
- 1 Large Bowl
- 1 measuring cup
- 1 wooden spoon
- 1 Measuring Spoons
Ingredients
- 2 1/2 cups chopped dates
- 1 cup water * may have to add extra if date mixture is too thick
- 1 juice of lemon
- 1/2 tsp baking soda
- 2 tbsp brown sugar I use date sugar
- 2 cups oats
- 1 cup whole wheat flour
- 1/2 cup brown sugar I use date sugar
- 1/4 tsp baking powder
- 1 cup vegan margarine I use Becel
Instructions
- Grease or line a square baking dish. The smaller the pan, the thicker the squares.
- Preheat oven to 350
- Make the date filling by chopping dates, adding them to a saucepan with water, and bring to a boil. Add lemon juice and 2 tbsp sugar.
- Cook until the dates are getting smoother, and then add baking soda. This will cause the dates to foam. Stir continuously with a wooden spoon and then remove from heat.
- In a large bowl, mix oats, flour, sugar, and baking powder. Add the margarine, mix until combined and sticking together.
- Press half the oat mixture into the bottom of the pan.
- Smooth date mixture over dates evenly.
- Sprinkle the remaining oat mixture evenly over the dates.
- Bake for 45-55 minutes until the crust is brown.
- Let cool and cut into squares.
