Apple Cranberry Muffins
Easy low-fat muffins packed full of nutrients. Great for a snack or pre-workout. Make them without nuts for a very low-fat version, or swap applesauce for mashed bananas.
Equipment
- 1 Large Bowl
- 1 set of dry measuring cups
- 1 Measuring Spoons
- 1 measuring cup
- 1 wooden spoon
- 6 cup muffin tray
- 6 muffin tin liners
Ingredients
- 2 cups whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ground allspice
- 1/2 cup light brown sugar, packed
- 1 cup apple sauce
- 1 cup oat milk
- 1 tsp vanilla
- 1 tsp apple cider vinegar
- 1 cup diced apple (about one medium apple)
- 1/2 cup cranberries
- 1/4 cup diced walnuts or pecans
Instructions
- Preheat oven to 350 and place liners in muffin tin
- Dice apple, I leave the peel on the apple.
- In a large measuring cup or small bowl, add plant-based milk and apple cider vinegar and let stand for a few minutes.
- Add all the dry ingredients, flour, baking powder, baking soda, cinnamon, allspice, and sugar into a large bowl and mix well.
- Add the apple sauce and vanilla to the plant-based milk and mix.
- Add the wet ingredients to the dry and stir.
- Add the diced apples, cranberries and walnuts and mix.
- Spoon into muffin cups and bake for 25-30 minutes
