Hollyhock Salad Dressing

Hollyhock is a fabulous spot on the incredibly beautiful Cortes Island, BC. They have a great cookbook and I make this salad dressing all the time.

Ingredients:

1/3 cup apple cider vinegar

1/3 cup filtered water

1/3 cup Tamari (I use Bragg’s)

2 cloves garlic

1/2 cup nutritional yeast

1 1/2 cups vegetable oil. I use 1/2 cup olive oil, 1/2 cup sunflower and 1/2 cup flax.

Place everything in a blender (or using a hand emulsion mixer) mix all the ingredients except the oil. Pour oil into mixture and blend. Lasts about 2 weeks in the fridge. Great on salad and potatoes!
