Vegan Apricot Cake

Apricot Cake

A light German-style coffee cake that can be made with apricots, peaches, plums or other fruit.

INGREDIENTS:

  • 1 cup applesauce
  • 1/2 cup natural sugar
  • 1/2 cup water
  • 1/3 cup of organic canola oil
  • 2 1/4 cups organic all-purpose flour
  • 4 tsp baking powder
  • 15-20 small ripe apricots sliced in half, pit removed

DIRECTIONS:

  1. Preheat the oven to 350°F
  2. Mix applesauce, sugar and oil in bowl. Add the water and mix thoroughly.
  3. In a small bowl mix flour and baking powder.
  4. Add flour into wet mixture and whisk until smooth.
  5. On a large baking sheet lined with parchment paper or slightly greased. Pour and spread out the batter. Don’t worry about pushing batter to the edges of the pan.
  6. On top of batter place the apricots. Push them into the batter.
  7. Bake for 25 – 30 min.
