Vegan, Chocolate Chip, Peanut Butter, Oatmeal Cookies.

It’s National Chocolate Chip Day! I didn’t even know that was a day. What could be better for Chocolate Chip day than cookies? Here is a quick and easy cookie recipe that is great with chocolate chips.

Ingredients:

1/2 cup Vegan Butter
1 cup Natural Sugar
1 cup Natural Crunchy Peanut Butter
1 tsp Vanilla Extract
1 1/2 cups Organic Flour
1/2 cup Organic Oatmeal
1 tsp Baking Soda
1/2 tsp Salt
2-3 Tbsp Oatmilk or other non-dairy milk
1/2 cup Vegan Fair Trade Chocolate Chips

Directions:

Mix the vegan butter and sugar with an electric mixer until creamy.

Mix in the peanut butter and vanilla.

In a separate bowl add flour, oatmeal, baking soda and salt. Mix dry ingredients into the wet ingredients and mix in with a spoon.

The dough may be a bit dry, you want to be able to make balls with the dough so add 1 Tbsp at a time of non-dairy milk until you have the right consistency.

Add chocolate chips.

Preheat the oven to 375°F

Roll into big balls and place onto a cookie sheet or baking tray. Press down with a fork and bake for 10-12 minutes.
Remove from the oven and place on a rack.
