What I eat in a week.
When I wrote that my December challenge was to eat more plant-based meals many of you wanted to know what I eat now? I eat lots of plant-based meals and some vegan, but not plant-based items too. I have been a vegetarian since September 1995 and mostly vegan since 2005. Yes, the mister eats this way too.
Mexican Rice Bowls are one of his favourites.
This week I am sharing what I ate the week of December 12th, a regular week of meals. I didn’t include all the non-plant based things I ate in case you wanted to use my week as a guide to plant-based eating. For full disclosure I did NOT include the following vegan, but not plant-based, foods that are listed below.
1. Rice Dream, that was delicious on my Pumpkin Apple Crisp.
2. Que Pasa corn chips with my chilli.
3. Yves, Mexican Ground Round, that I added to my chilli.
4. Daiya “cheese”
5. The delicious vegan chocolate cupcakes with peanut butter icing that I made the mistake of baking. I made a mess of the first ones, so I had to make more. Not really on the whole foods, plant-based plan.
I also didn’t include what I drank, black coffee, herbal tea and at least one glass of water every night.

You might notice that I eat a lot of carbohydrates, between 50-60% of my diet is complex carbohydrates and that is a healthy diet. For the record, I am healthy, I have low blood pressure, my BMI is the low end of normal, my cholesterol is great, my blood sugars are normal. I am not genetically blessed. My family has a long, sad history of cancer, heart disease, high blood pressure, strokes, we aren’t the long living types. My diet and exercise are the only difference between me and most of my relatives.
