Chopped Salad
I love salad for dinner. Big salads with lots of crunch. Texture is very important to me. I love crunch. An easy dinner or lunch is chopped salad. Whatever types of vegetables that you can cut into chunks with a homemade dressing, beans and sometimes a little avocado topping and you have a meal.
Red leaf lettuce cut into strips
1 carrot
1 mini cucumber
cherry tomatoes
1/4 red pepper cut into chunks
Red Cabbage cut into chunks
1/4 cup of chick peas, drained and rinsed
1/4 avocado
Dressing:
2 tbsp olive oil
4 tbsp balsamic vinegar
1 tbsp mustard, use a good one, nothing that comes in a squeeze bottle
fresh ground pepper
1 tsp herbs de provence
Options:
1 tbsp ground flax
1 tbsp hemp hearts
1 tbsp roasted, unsalted pumpkin seeds
