I have been 95% successful in my plant based eating plan. Only a few processed, vegan, options have been consumed. Like the Rice Dream, non dairy ice cream, that goes really well with Apple, Pear, Pumpkin Crisp (yes, you are getting the recipe).
I know I feel better when I am not eating processed foods, but now there is a new great reason to eat more plants. Lutein.
What is that? A nutrient that is found in plants and protects your brain from cognitive decline as you age. Lutein protects your ability to retain your mental skills, knowledge and experience as you age as well as retaining gray matter.
Where do you find lutein? In leafy greens, cruciferous vegetables like broccoli and cauliflower, and in egg yolks, but only because the chickens were eating a plant based diet. Personally, I would go to the source and not worry if the chickens were eating a proper diet.
