Banana Oatmeal Chocolate Chip Muffins
Equipment
- 1 Large Mixing Bowl
- 1 Large Measuring Cup
- 1 Measuring Spoons
- 1 6 Serving Muffin Tin
- 6 Extra Large Muffin Cups
Ingredients
- 1 cup oat milk
- 1 cup oats
- 1 tbsp ground flax
- 3 tbsp warm water
- 1.5 cups whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 medium mashed banana
- 1/2 cup brown sugar I use date sugar
- 1 tsp vanilla
- 1 small lemon juiced
- 1/4 cup chocolate chips
- 1/4 cup walnuts or pecans
Instructions
- Preheat the oven to 375 degrees and line muffin tin with liners.
- Add flax and 3 tablespoons of warm water in a small bowl and let it sit.
- Add oats to oat milk and let sit.
- Add flour, baking soda, baking powder, cinnamon, salt, and sugar to the large bowl and mix well.
- Once the liquid has absorbed the flax and oats, mix together with the vanilla, mashed banana, and lemon juice.
- Add wet ingredients to dry and mix. Don't over stir.
- Then add chocolate chips and pecans or walnuts.
- Add to muffin cups and bake for 25-30 minutes
