Banana Oatmeal Chocolate Chip Muffins

  • 1 6 Serving Muffin Tin
  • 6 Extra Large Muffin Cups

Ingredients
  

  • 1 cup oat milk
  • 1 cup oats
  • 1 tbsp ground flax
  • 3 tbsp warm water
  • 1.5 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 medium mashed banana
  • 1/2 cup brown sugar I use date sugar
  • 1 tsp vanilla
  • 1 small lemon juiced
  • 1/4 cup chocolate chips
  • 1/4 cup walnuts or pecans

Instructions
 

  • Preheat the oven to 375 degrees and line muffin tin with liners.
  • Add flax and 3 tablespoons of warm water in a small bowl and let it sit.
  • Add oats to oat milk and let sit.
  • Add flour, baking soda, baking powder, cinnamon, salt, and sugar to the large bowl and mix well.
  • Once the liquid has absorbed the flax and oats, mix together with the vanilla, mashed banana, and lemon juice.
  • Add wet ingredients to dry and mix. Don't over stir.
  • Then add chocolate chips and pecans or walnuts.
  • Add to muffin cups and bake for 25-30 minutes
