It is the season of fall flavours.
One great way to enjoy the flavours of fall is with pumpkin. A member of the squash family that can be used to make many delicious and healthy snacks.
Pumpkin is an excellent source of Vitamin A in the form of beta-carotene. This antioxidant has been shown to improve memory and cognitive function. Beta-carotene from plants, not supplements, is also protective against lung cancer. Other research shows that antioxidants such as beta-carotene can prevent premenopausal breast cancer and pancreatic cancer.
Pumpkins, which are native to North America, are also one of the oldest domesticated plants, from as early as 7,500 – 5,000 BC. A real classic!
I love pumpkin and this week I have been experimenting with making pumpkin smoothies. According to the man this one tastes like pumpkin pie in a glass… enjoy!
Pumpkin Smoothies for 2
1/2 398 ml can of pumpkin puree
2 cups unsweetened vanilla oat milk
1 tbsp maple syrup
1 frozen banana
2 tbsp almond butter
2 tbsp ground flax
2 tbsp hemp hearts
1 tsp each, ground ginger, cinnamon, nutmeg
1/2 tsp ground cloves, allspice
Place ingredients in blender and mix until smooth!
Eat your veggies!
